Italian Pumpkin Risotto with Amaretti (Risotto Zucca e Amaretti)

Ideariso risotto mixes are created by combining selected quality ingredients with the Gigante Vercelli variety, which is part of Ideariso's Presidio Slow Food* project.

Gigante Vercelli rice is an ancient rice variety, ideal for preparing delicate and creamy risottos.

This mixture is packaged in an aluminum-lined cardboard tube with a controlled atmosphere to guarantee unique freshness and quality.

Finally, the characteristic that most distinguishes Ideariso risotto mixes is the cooking time: in 13-15 minutes, you get three to four portions of creamy risotto with an excellent taste.

Preparation: Pour the "risotto mix" into a pan with a little heated oil and sauté for 1 minute over low heat, stirring constantly. While stirring, pour in half a glass of water or white wine and let the liquid evaporate. Gradually add 800-1000 ml of hot water and let it evaporate completely (13-15 min). Finally, add a knob of butter and let it melt.
