Extra virgin Zammara olive oil is a type of olive oil produced in Sicily, Italy. It is made from Nocellara Etnea olives, an olive variety native to eastern Sicily at the foot of Mount Etna.

This type of olive oil has an emerald green color with light golden yellow highlights. There is light to medium green fruitiness with aromas of artichokes, tomatoes, freshly cut heather and notes of almonds. The taste is light with subtle notes of bitterness and spiciness.
