Italian arbutus honey (Miele di Corbezzolo)
Arbutus honey is one of the rarest and most prized of all the honeys produced in Italy.
This is because it is produced in a very limited area and in the late season, when weather conditions often make it difficult for the bees to work.
This means that production is always quite rare.
This honey is made from the pollen of the common arbutus, an evergreen plant typical of the Mediterranean maquis. Arbutus, which can grow as a low bush or develop into a full-fledged plant, depending on the method of "shaping". It produces edible red fruits that are often used in jams.
Brezzo honey is made from planica grown in Sardinia.
Smell: strong, after coffee grounds and bitter herbs.
Taste: strongly bitter, after bitter herbs, rhubarb, bitter.
Serving: excellent with cheeses, especially long-ripened, spicy or fatty cheeses. Suitable for preparing desserts and alcoholic infusions.
Color: amber in liquid state, beige to hazel in crystalline light.
Brezzo honey experts respect the properties of this gift of nature at every stage of the production process, which is strictly controlled and prepared without heat treatment. Interventions in the product are minimal and honeys from different batches are not mixed in order to preserve their typicality.
