It is one of the honeys that crystallizes the fastest due to its high glucose content.

The color is clear, ivory yellow in the solid state. In the mouth, the taste is soft, pleasant, like after a chamomile infusion, with a distinctly fresh feeling.

The fresh taste in the mouth is due to a naturally very fine crystallization, which results in a creamy substance that is very pleasant and spreads well.

It is excellent as a spread on warm bread. Goes well with medium-ripened sheep's cheese.
