Rossi honeys are natural products, they are not flavored, they do not contain aromas and they are honeys produced by bees that visit single flower fields.

The taste of honey is influenced by the particular flower of the plant.

Italian beach flower honey (Miele Toscano di Spiaggia)

There is a honey with the fascinating and curious name "beach honey" and it is a unique Tuscan rarity.

Beach honey is so called because its flowers grow in the sand dunes and Mediterranean scrub of the San Rossore-Massaciuccoli Park, one of the most beautiful and extensive regional parks in Tuscany (in fact, it covers large areas of the provinces of Pisa and Lucca).

It is so called because those who smell and taste it are reminded of a hot summer's day walking among dunes coloured golden yellow by helichrysum and other Mediterranean maquis plants.

Beach honey is, of course, a floral honey, the scent of which is dominated by helichrysum, which is abundant in the area of origin of this honey.

From June to August, the bees collect nectar and resins and the resulting honey has a flavour of sea and beach flowers. These include cistus, tamarisk, arbutus, pittosporum and especially helichrysum, a yellow flower with an intense scent that colours the landscape.

Bees do not collect pollen from this flower, however, because insects have great difficulty finding the flowers near dunes and beaches. Because of the constant presence of wind, they often stop at these yellow flowers to rest. This causes them to collect fragrant essential oil in their stops, which is then added to the nectar provided by other plants on the beach.

colour: light amber
consistency: transparent and definitely liquid
scent: reminiscent of the essential oils of the Mediterranean scrub plants from which it is made.
taste: it does not have a very sweet taste like other honeys, but it is distinctive and pungent. It is reminiscent of the essential oils of the Mediterranean poppy plants from which it is made.
It is best enjoyed on slices of fresh bread, with dried fruit and sweet and sour starters. It is also suitable in combination with sheep's milk ricotta or other cheeses, both fresh and aged. It is ideal when paired with still white wines.

Legends of its aphrodisiac properties have been lost over the ages, so much so that its use has been banned in monasteries. Try it to see for yourself its effects and taste.

Ingredients: honey from beach flowers (country of origin: Tuscany - Italy).
