Tuna is a nutritionally valuable fish that is very versatile in cooking.

Bluefin tuna gets its name from the color of its meat, which is deep red when fresh. It is one of the largest species of tuna, weighing up to 600 kg and measuring 3 meters. It is characterized by silvery stripes on the belly.

Thanks to a diet based on the consumption of other blue fish and shellfish, tuna meat is rich in omega 3 fatty acids. Polyunsaturated fats are essential for our body, which can be beneficial to health, for example to regulate blood cholesterol levels.

Bluefin tuna contains 5% fat (of which 1.3% are essential omega-3 fats) and the proportion of protein is approximately 23%.

Due to the quality of the meat and its rarity, bluefin tuna is considered the most valuable of all commercial tuna species.

Belly of red tuna in olive oil (Ventresca di Tonno Rosso in olio di oliva)

This is the most delicate and valuable part of the tuna, covering the flanks and belly.
After twelve hours of cooking and standing, it is preserved and seasoned with olive oil.
It is soft and gentle on the tongue, at the same time very tasty.
That is why it is served in different ways, appetizers, side dishes or main course.

After being caught , the fish are processed while still fresh in the Adelfio laboratory, where the entire cycle of their processing takes place right up to packaging. It starts with the selection of pieces, through cleaning, cooking, to the last stage of packaging. And all this with full respect for the old craft tradition.
