Cuttlefish ink is an ink used by these cephalopod molluscs for defensive purposes.
Freshly obtained, it is considered to be a product of great gastronomic value.
It consists mainly of melanin, but also contains proteins, lipids, minerals (especially iron) and taurine.
Cuttlefish ink is particularly suitable for cooking because it has a distinctive and decisive flavour even when small quantities are used.
When added to a dish, it effectively colours pasta. In the sauce, it enhances the colour contrast and increases the fishiness.
