It is made according to an ancient recipe from northern Italy, preserved in the Dolomites mountains. Its flavor does not come from an excessive use of spices, which often serve to cover up the taste of low-quality meat. It comes from deep natural smoking and a slow dry-aging process, which guarantees its tenderness and distinctive flavor.
The meat is first cut into thin strips, lightly seasoned, and then cold-smoked for half a day. Subsequently, it is dried for several days at a low temperature.
The result is a concentrated flavor dominated by smokiness. An ideal quick snack that fills you up and curbs cravings for "unhealthy" snacks.

Superior Pork Jerky - Smoked Dried Pork
They have the typical tenderness of pork, perfectly balanced with saltiness and a smoky flavor that is present but not too strong.
Pork leg is used as the raw material, hand-cut into thin slices, seasoned with spices, and smoked with beech wood for 24 hours.
Finally, they are allowed to slowly mature for 3 to 4 days to ensure their tenderness and flavor.
For 40g of dried meat, 135g of fresh meat is needed.
