Italian Thistle Honey (Miele di Cardo)

Wild thistle is a very special plant of the Mediterranean maquis. This thistle grows wild on the arid plains of Sicily, Calabria and Sardinia.

Its flowers, which bloom at the beginning of summer, yield highly sought-after honey. This is a typically "island" honey, because the only production of thistle honey is possible in the area of ​​Sardinia, Sicily and the island of Elba.

Its scent and aroma are distinctive as long-lasting. Thistle honey crystallizes on its own several months after harvest.

Excellent as table honey and in combination with mature and spicy cheeses that have a strong taste and medium maturity, e.g. taleggio cheese. Also suitable for sour yogurts
