It is a honey that is difficult to produce because it is collected at the end of winter, when bees must face adverse climatic conditions to collect this nectar.

It is a honey with a delicate but intense aroma, reminiscent of the fruit itself. Its taste is also delicate at first, but as soon as it starts to melt in the mouth, it pleasantly surprises with its bitterness. Freshly made, it has an amber color and takes on a beige hue after crystallization.

This honey can be consumed pure, as a natural sweetener, added to yoghurts, cocktails, herbal teas and infusions. It is ideal for flavouring mature cheeses or consumed directly for an authentic experience of refinement.
