The processing of swordfish roe is carried out exclusively by hand, in accordance with artisanal techniques handed down since 1931. After careful selection, the roe is gently processed, steamed and placed in glass jars covered with olive oil. Each step aims to preserve its integrity, aroma and nutritional value.
